This is my most favorite thing to eat for breakfast. When I am cooking the night before and realize that there will be rice leftover I get a little excited about what is going to happen when I get up. This keeps me going until lunch, no problem. My family loves it also.
1/3 cup cooked rice
2 poached eggs
1/2 avocado
1 cup spinach (cooked in the micorwave for 40 seconds)
salt and pepper
Yummy!

How in the world do you get your kids to eat it? It looks delious but my kids won't eat anything for breakfast that isn't coved in sryup or shaped like a dinosaur egg.

I am a tyranical hippie mom! They don't know Dinosaur egg breakfast exisits. They think vanilla yogurt is dessert, aren't I mean!
